This Lemon Chex Mix is the perfect snack food for any occasion. They only require a few simple ingredients and come together in just a matter of minutes. We love making puppy chow for movies, parties, showers and gatherings and this lemon version might be the most delicious yet!

ThisLemon Chex Mixis quick, simple, delicious, and the perfect snack food. I have always loved Muddy Buddies, but with summer right around the corner I wanted something light and fresh.

We love making these for game night, movie night, pool day, or just when we need a yummy treat. This recipe definitely feeds a crowd, so it’s a perfect snack food for any event.

They have the perfect hint of lemon to them, but they definitely aren’t overpowering. You will love this delicious citrus twist, on your favorite snack food.

My sister and I made these for our kids one afternoon when they were running through the sprinklers and they never made it out to the kids. We were downing this Lemon Chex Mix by the fistful!

You’ve been warned. They are addictive.

Can I make these lemon buddies ahead of time?

For this recipe, we don’t really recommend making them ahead of time. Because of the lemon juice in the recipe, it breaks down the cereal a little bit, and makes it a little soggy.

These are best when made and served immediately.

If you have leftovers, we recommend storing them in an airtight container. They will soften with time, but they will still taste delicious.

Lemon Chex Mix Recipe

This Lemon Chex Mix is the ultimate summer snack!

Ingredients

  • 9 cups rice chex cereal
  • cups white chocolate chips
  • ¼ cup butter
  • 4 teaspoons grated lemon peel
  • 4 Tablespoons lemon juice
  • 2 cups powdered sugar

Instructions

  • Measure cereal into a large mixing bowl and set aside.

  • In a microwaveable bowl, microwave white chocolate chips, butter, lemon zest and juice uncovered on high for 1 minute; stir.

  • Microwave about 30 more seconds or until mixture can be stirred smooth.

  • Pour mixture over cereal, stirring until evenly coated.

  • Pour into a 2-gallon resealable food storage plastic bag.

  • Add powdered sugar, seal bag and shake until all the cereal is well-coated.

Notes

For this recipe, we don’t really recommend making them ahead of time. Because of the lemon juice in the recipe, it breaks down the cereal a little bit, and makes it a little soggy.

    I tried these on a whim for a class we had in the fall. At first everyone just looked at the bowl like mold was growing on it. Then one brave soul took a scoop, and another, and before I knew it, the bowl was empty. It is easy, quick, and yummy. Can't go wrong with this one!

    Ive tried making these at least twice. When I make Muddy Buddies they keep forever, but these Lemon ones go soggy after a day. I tried using less lemon juice...I cant think of anything else.. So very sad because they are SO STINKING DELICIOUS! :( What could I be doing wrong?

    I noticed that too . . . but only after about a day, they just don't last as long as regular muddy buddies. Maybe eat them all on the first day while they are crisper. :) YUMMY!

    I wonder if you could do a light toast in the oven to burn off some of the water from the lemon juice and still have it be lemon flavored without being soggy.

    Video shows Chex cereal, white chocolate chips and lemon cake mix. Measure the cereal into large bowl, melt bag of chips, stir and coat cereal pieces, put half or so in large zip bag, sprinkle generously with cake mix. Seal bag and shake. Repeat with remaining cereal and cake mix.

    I saw just 3 ingredients in the video. Chex Mix. White chocolate. And Lemon cake mix. I thought I was missing something also when I clicked on the link and saw other ingredients and cake mix was not one of them! I’m still going to try it like the video and see what happens.

    Perhaps try substituting True Lemon for the lemon juice if you plan to make it ahead or keep it for a longer period of time.

    So, I had a couple thoughts in regard to the soggy problem. You could try to reduce and concentrate the juice on the stove. Or, you can dehydrate lemon slices and grind them up into a powder, or you could buy some citric acid and combine the zest, citric acid and some granulated sugar in a blender or small food processor. Also, I wonder if corn chex might hold up a little better as well.
