3 12 Tbsp. coconut oil, 1 Tbsp. butter
Confectioners Swerve, 1/3 cup

NOTE ABOUT NUTS

Pecans and walnuts are excellent additions to these cookies because they are the nuts with the fewest carbohydrates and highest fat content, making them ideal for Keto.

These cookies are even better because they both have a smooth, buttery flavor.

Notwithstanding the fact that nuts are naturally heavy in fat, not all nuts are suitable for keto. Actually, there are a few nuts that, if consumed in large quantities, may cause your carb count to rise excessively and cause you to exit ketosis.

So use caution if you’re considering replacing those.

CHIPS OF LOW CARB, KETO CHOCOLATE

We’re going to use some keto-friendly chocolate chips to make our low-carb magic cookies, as I already explained.

Every mouthful has a little bit more diversity because to the several kinds of chocolate chips used, and the caramel’s saltiness blends so beautifully with the chocolate’s sweetness to really elevate these keto cookies.

Having said that, ChocZero’s Sugar-Free Keto Chocolate Chips work just as well if you can’t get Lily’s Chocolate Chips.

KETO MAGIC COOKIES: HOW TO SWEETEN THEM

Therefore, we’ll use Confectioners Swerve to give these sugar-free cookies a little extra sweetness.

And I adore Confectioners Swerve since it is sweeter than conventional sugar by a factor of 1:1 and has neither calories nor carbs.

But if you don’t have Confectioners Swerve, monk fruit sweetener is a fantastic alternative. I also advise using Lakanto’s Confectioners for monk fruit sweeteners.

KETO MAGIC COOKIES RECIPE

These cookies are quite simple to make, as I’ve already indicated.

And what’s fantastic about them is that every mouthful is a brand-new experience with a unique flavour.

Beginning with the wet ingredients is step one.
Therefore, your first task should be to pre-heat your oven to 350 °F (176 °C).

Then, depending on the wattage of your microwave, you should heat your butter and coconut oil separately in the microwave for 15 to 30 seconds.

Finally, in this step, use a whisk to combine the butter, coconut oil, and egg yolks in a medium bowl. Set the bowl aside.

2. BLENDING IT UP

You should now begin mixing in the dry ingredients.

So combine the Confectioners Swerve, coconut flakes, pecans, walnuts, and chocolate chips in the same bowl.

Fold(rubber spatula) all of the ingredients together until everything is well combined.

After you’ve taken care of it, allow the batter to chill for 30-45 minutes. The dough will be able to harden as a result, making it simpler to shape for baking.

Cooking and cooling in Step 3

This procedure should be started by using parchment paper to line a baking pan.

Once the dough has dried, make 12 separate dough balls using a cookie scooper, or a spoon if you don’t have one.

  • 5g or 1/3 cup of confectioners’ swerve
  • Unsweetened Coconut Flakes, 1 Cup (100g)
  • Chop 1/3 cup (45g) of pecans.
  • Chop 1/3 cup (45g) of walnuts.
  • 100g or 2/3 cup of semisweet chocolate chips

You may choose to use half semisweet chocolate chips and half salted caramel chocolate chips as an optional substitution.

INSTRUCTIONS

  1. Oven should be heated to 350 °F (176 °C).
  2. Mix egg yolks, melted coconut oil, and melted butter in a bowl(medium). Egg yolks and other ingredients should be thoroughly blended after a few minutes of whisking.
  3. Use a rubber spatula to gently incorporate everything after adding the remaining ingredients.
  4. Put it in the refrigerator for THIRTY to FORTY FIVE minutes.
  5. Make 12 balls of cookie dough with a tablespoon or cookie scoop when the dough has dried. Line baking sheet with parchment(evenly arranged) .
  6. 350 °F (176 °C) for 8 to 10 minutes, or until golden brown.
  7. After baking, remove them and let them cool.
