Ingredients list for the Grilled Mushroom Skewers
- 2 pounds mushrooms, sliced lengthwise (we used cremini)
- 2 tablespoons olive oil
- 1 tablespoon soy sauce (or coconut amino if paleo)
- 3 cloves garlic, chopped
- 1/2 teaspoon thyme, chopped
- 1 tablespoon fresh chopped parsley
- 1/4 teaspoon salt and pepper, orto taste
- 1/2 teaspoon red chili pepper flakes, optional

Directions
1. To make the grilled mushroom skewers: Marinate the sliced mushrooms in the mixture of the remaining ingredients for 30 minutes. In the meantime, soak wooden skewers in water to prevent burning.
2. Skewer the mushrooms (it’s easier when you twist instead of just pick through the mushroom) and grill until just tender and slightly charred, about 2-3 minutes per side.
3. Transfer the grilled mushroom skewers to a serving platter and sprinkle some chopped parsley and serve immediately. Enjoy!

Mushrooms can be considered bland by many, but when you toss them in a garlic, olive oil, and soy glaze, they’ll getall the attention. Here are some tips to consider before you get started with your grilled mushroom kabobs:
- Make sure to presoak your wooden skewers:Whenever you’re grilling kabobs, presoak wooden skewers for 20 to 30 minutes before you throw them over the grates.
Clean the mushrooms instead of washing underwater.Mushrooms are like sponges, they’ll soak up a lot of moisture, which can lead to sogginess. Wipe any excess dirt away with a damp paper towel instead.
- You can add a twist by adding balsamic to the marinade, it’s delicious!
What other mushrooms can we grill?
We use crimini mushrooms because we think they are meatier than their cousins, the buttons or the portobello, but this grilled mushroom recipe works with any mushroom that is thick enough to hold on the kabob.
How to cook the mushroom skewers on the stove.
Proceed as per the recipe, just cook the mushroom skewers on a hot griddle pan or a cast-iron skillet. You can deglaze the cooking juices and drizzle over the skewers before serving.
How to make the grilled mushroom skewers ahead
If making ahead, cover the mushroom kabobs tightly with wrap and place in your refrigerator until about 15 minutes prior to cooking.
