The world's most perfect berry — yes, avocados are classified as berries — doesn't need much to taste delicious. A little salt is all you really need. But when you're feeling a little fancier, try one of these 10 ways to turn your avocados into masterpieces with no more than one other ingredient.
Note: You can make almost all of these dishes with just a microwave, blender, or fork. Because feeding yourself at the end of a long day should be just that easy.
1. Avocado + Egg = Poached Egg in Avocado
To start, get a deep bowl and fill it with cold water. Crack an egg gently into the water and microwave for just about two minutes on a low setting. Drain your *~PeRfEcTly~* poached egg and set aside. Pit your avocado and gently place the egg in the hole. Sprinkle a little salt on top and you've just won brunch in under three minutes.
2. Avocado + Hummus = Fresh Dip
To make the most satisfying dip of all time, blend 1 cup of your favorite hummus with one ripe avocado. Serve either as a dip or stuff into pita bread wedges for fancier serving.
3. Avocado + Whole Wheat Pasta = Avocado Linguini
Boil a handful of whole wheat pasta with a few teaspoons of salt. When your pasta is finished cooking, strain it, saving about ½ cup water. Taking half an avocado, cube it and toss it back into the pan with the starchy water and the pasta. Mix together until smooth. Try not to eat it all right out of the pot.
4. Avocado + Tuna = Tuna Salad
Mash half an avocado with a can of tuna. Add salt and half a tablespoon of olive oil if you have it. Serve by spooning tablespoons into pitted avocado halves.
5. Avocado + Frozen Berries = Avocado Smoothie
Blend 1 cup frozen berries, half an avocado (frozen avocado also works if you want everything frozen), blend until smooth, and revel in the deliciousness of a vegan smoothie that actually tastes good. You could make this in your sleep!
6. Avocado + Pineapple = Pineapple Salsa
Pineapple has just the right amount of acidity, making it perfect for adding to anything mild to give it a little extra bite. Dice 1 cup pineapple and cube one avocado, mix well with a sprinkle of salt, and you're done! To be extra adorable, serve it in the avocado shell.
7. Avocado + Lime = Creamy Salad Dressing
Juice one lime and blend with avocado. The lime helps preserve the avocado, keeping it fresh for about a week so you can make this en masse and serve on top of your favorite salads for days.
8. Avocado + Chocolate = Chocolate "Mousse"
Avocado and chocolate sounds disgusting, but this two-ingredient recipe is mind-blowing. Mix one ripe avocado (approximately 1 cup mashed) with ⅓ cup sweetened hot cocoa mix. Blend until completely smooth.
9. Avocado + Eggs = Avocado Deviled Eggs
Boil six eggs in the microwave and let them sit to cool. While they are cooling, blend an avocado until smooth. Peel your eggs and cut them in half, pop out the yolks, and set the egg whites aside. Blend your yolks with the smooth avocado, and pipe the mixture back into the eggs with either a spoon or a plastic sandwich bag with a corner cut off. Serve with ham for green eggs with ham!
10. Avocado + Ice Cream = Best Milkshake Ever
At this point, it is clear that avocados are a precious gift to womankind and that they go with just about everything. This includes ice cream. In a blender, mix two scoops of ice cream and one ripe avocado; if you want to make more (you will), just add another half an avocado for every scoop. Blend until completely smooth and continue to be bewildered by how good this milkshake is.
